This is a delicious vegan Caesar salad, its popular, easy to make and will wow the crowd. It’s completely plant-based and healthy but creamy as you’d expect from a traditional Caesar salad.

The creaminess comes from the cashews along with the lemon on crisp lettuce with toasted bread cubes and it’s rich and full of flavor. It’s fun, quick and easy to prepare the vegan Caesar salad at home that everyone can enjoy.

Double the ingredients quantities to double the dressing if you’re making this for a larger crowd and you can keep this in the fridge, sealed for a few days. It’s crowd-pleasing, it’s healthy and simple to make and everyone will go nuts over it.

For the dressing:

Combine drained cashews, mustard, lemon zest (plus juice), minced capers and minced garlic gloves in a blender and blend until smooth.

For a bit more creaminess, add a little bit of olive oil (this is optional).

Add a little hot water to thin the mixture and continue to blend thoroughly.

Season with salt and pepper to taste and add more lemon juice or minced garlic if desired.

Prepare the bread:

In a large skillet over medium heat, add butter, garlic powder and onion powder.

Add the bread cubes and stir until toasted.

Prepare the lettuce:

Remove the stems off the lettuce and finely chop the leaves into bite-sized pieces and place in a large bowl.

Add your chopped lettuce to a bowl and toss with 1/2 cup of the dressing.

Top with the toasted bread cubes and sprinkle with salt and pepper to season if desired.

You may also top up with avocado and capers if desired.
